Congrats on all those approvals! I personally move all (or close to all) spending to any new cards I opened until the sign-up bonus (SUB) requirements are complete. No need to focus on earning 1% vs. 5% on other cards when I'm about to achieve a much greater return (often 10%+) when the SUB is complete.
Planning. Take a look at what you usually spend, break that down into three strategies and look for any potential add-ons. For example, if you go out to eat with friends ask if they don't mind you using your card to earn the points and then settle up later. If worse comes to worse and you absolutely can't meet the requirements without getting into trouble, then you may have to give up an offer. The only good option at that point would be to give up the lowest offer. That article Mark Reese put up pretty much says it all.
